This recipe is more about presentation. It’s simple to make & grand to present.It’s a dessert with custard at the bottom layer topped with fruits, then add a layer with Falooda & garnish with fruit jelly, fruits, nuts, sugar balls, etc.
there can be innumerable combinations… a few are:
Rose Falooda & vanilla custard.
Kesar Pista Falooda & Butterscotch custard.
Mango Falooda & Vanilla custard.
Let’s start with preparing
Milk 1/2 litre
Sugar 2-3 tbsp
Custard powder (flavour of your choice or according to the recipe) 2 heaped tbsp
In a little milk dissolve the custard powder & keep it aside.
Heat the remaining milk with sugar & bring it to a boil.
Take off from heat, Add the custard milk paste & mix well for 2-3 minutes.
Switch off gas & chill for 1 hour in the refrigerator.
Milk 1/2 litre
Sabja seeds 4 tbsp soaked for 30 mins
Vermicelli 1/2 Cup boiled in water for 3-4 minutes
Sugar 2 tbsp
Cornflour 1/2 tsp optional
warm the milk & dissolve sugar & set aside. Add corn flour if necessary.
for Kesar Falooda add dry fruits & saffron strands in the milk.
for Badam pista Falooda add 2-3 tbsp MTR/ Anandabhavan badam drink powder in the warm milk & mix well. If u wish add green food colour & a few chopped pistachios.
For Mango Falooda, prepare the milk with 1 tbsp mango custard powder.
Rose/ strawberry Falooda with vanilla custard.
assorted chopped fruits apple banana chikku grapes pomegranate 1 cup
strawberry crush or rose syrup
assorted chopped Dry fruits
Icecream (Vanilla, Dryfruit)
Assembling the Falooda fruit custard
- Set the custard in the glass, top with chopped fruits.
- Pour rose syrup or strawberry crush, Add sabja seeds & vermicelli.
- Pour the flavoured milk.
- Add a scoop of ice cream.
- Garnish with fruits, nuts,& rose petals for rose Falooda & strawberry pieces & jelly cubes for strawberry Falooda, drizzle a bit of strawberry crush on top.
Kesar Pista Falooda with Butterscotch custard
Kesar Pista flavoured milk
Boiled sev 1/2 cup
Soaked sabja seeds 4tbsp
Kesar Kulfi as required
Dry fruits for Garnish as required
Chopped fruits as required
Assembling the dessert
Just after preparing custard add few drops of butterscotch essence in the custard milk. & allow it to set.
Take a glass, set the custard as the bottom layer.
add chopped apples & pear.
add a tbsp each of sabja & boiled sev. Top it with the flavoured milk.
Final top layer is some Kesar Kulfi. Garnish with dry fruits. Kesar Pista Falooda with Butterscotch custard ready.
